Beautiful! We we were glad we got to see New Orleans before Katrina too, the French Quarter was awesome! Could you possibly put a little more powdered sugar on there. lol :)

Ah those are excellent! I was in NO for business a few years ago and I made beignets and hot chocolate at Cafe du Monde a morning ritual for the week I was there!

With our french background here in Canada, many folks have beignet irons.These are cast iron templates on an iron arm.You dip the template (which is shaped like a flower or butterfly etc) in the batter and then dip it into the hot oil.When the beignet is ready it drops off the iron.mine is up
